Strawberry Coconut Nest

  • 1 pkg or 175 g Shirriff Coconut Cooked Pudding and Pie Filling mix
  • 3 cups or 750 mL milk
  • 1/3 cup or 75 mL flaked coconut (toasted)
  • 2 cups or 500 mL whole strawberries
  • 1 kiwi fruit (peeled, halved and thinly sliced)
  • 1/4 cup or 50 mL apricot jam
  • 1 tbsp or 15 mL lemon juice
  1. 1. Cook pudding mix according to package directions. Pour into 6 dessert dishes. Refrigerate until set.
  2. 2. Arrange coconut around edges of dessert dishes. Arrange fruit in centre. Melt jam and lemon juice in microwave. Brush over fruit.
  3. Makes 6 servings
  4. Hint: To toast coconut, place on baking sheet. Bake at 350ºF (180ºC) 3-5 minutes.
