Salmon Baked In Potato Shells
- 1 lb canned salmon
- 8 medium sized potatoes
- 1/2 cup milk
- 1 chopped onion
- Salt and Pepper
- 1 cup bread crumbs
- 2 tbsp fat
- Flake salmon, removing all skin and bones. Slice off tops of potatoes and scoop out contents. Mash thoroughly, adding milk, onions and seasonings to taste. Add salmon, mix lightly. Stuff mixture in potato shells, cover with crumbs, dot with fat. Bake in 400 degree oven for 25 mins. Serves 6 to 8.
