Apricot Squares
- BOTTOM:
- 1 cup flour
- 1/4 cup brown sugar
- 1/2 cup butter
- TOP:
- 1 cup dried apricots
- 2 eggs
- 1/2 tsp vanilla
- 1 cup brown sugar
- 1 cup nuts
- Bake bottom at 350 degrees until light brown. Place apricots in pan. Cover with water and boil until soft. Beat eggs and vanilla until light. Beat in sugar and nuts. Add to apricots. Return to oven for 25 min.
