Lemon Cheesecake

  • 2 Cups graham wafer crumbs
  • 2 tbsp. sugar
  • 1/2 cup melted butterMix and pat into a 9 x 13 pan.
  • Bake at 325 degrees for 8-10 minutes. Cool.

FILLING:

  • 1 pkg. gelatin
  • 1 cup boiling water
  • 2 tbsp. lemon juice
  • Dissolve and let cool (but not set.)
  • 2 cups whipping cream (whipped)
  • 3-4 oz. cream cheese (softened and whipped)
  • 1 cup sugar
  • 2 tsp. vanilla
  • Whip all together.
  • Pour over crust and refrigerate.Cover with cooked lemon pie filling.
