Lemon Cheesecake
- 2 Cups graham wafer crumbs
- 2 tbsp. sugar
- 1/2 cup melted butterMix and pat into a 9 x 13 pan.
- Bake at 325 degrees for 8-10 minutes. Cool.
FILLING:
- 1 pkg. gelatin
- 1 cup boiling water
- 2 tbsp. lemon juice
- Dissolve and let cool (but not set.)
- 2 cups whipping cream (whipped)
- 3-4 oz. cream cheese (softened and whipped)
- 1 cup sugar
- 2 tsp. vanilla
- Whip all together.
- Pour over crust and refrigerate.Cover with cooked lemon pie filling.
