Soba Dashi

  • For Dashi
  • 1 leaf Komba (kelp)
  • 1/2 L Soy Sauce (low salt)
  • 30 grams Sugar
  • 150 ml Mirin
  • 12 grams Bonita Flakes
  • 1 Litre Water
  • For the Garnish
  • 60 grams Shitake Mushrooms (sliced)
  • 60 grams Soybeans (cooked)
  • 60 grams Pickled Daikon (diced)
  • 60 grams Barley (cooked)
  • 30 grams Chopped Scallions
  1. Boil the Kombu in the water for 3-4 minutes. Strain into the soy sauce. Add the sugar, mirin, bonito and boil 1 minute then simmer 3-4 minutes and strain through a cheese cloth. Reheat the garnishes in the soup and serve.
