Soba Dashi
- For Dashi
- 1 leaf Komba (kelp)
- 1/2 L Soy Sauce (low salt)
- 30 grams Sugar
- 150 ml Mirin
- 12 grams Bonita Flakes
- 1 Litre Water
- For the Garnish
- 60 grams Shitake Mushrooms (sliced)
- 60 grams Soybeans (cooked)
- 60 grams Pickled Daikon (diced)
- 60 grams Barley (cooked)
- 30 grams Chopped Scallions
- Boil the Kombu in the water for 3-4 minutes. Strain into the soy sauce. Add the sugar, mirin, bonito and boil 1 minute then simmer 3-4 minutes and strain through a cheese cloth. Reheat the garnishes in the soup and serve.
