Moroccan Style Pilaf
- 3-1/2 cups water
- 1-1/2 cups Uncle Be’s Long Grain Perfection Rice (uncooked)
- 1 tbsp. Chicken bouillon
- 1 tsp. oil
- 1/2 cup Onion (diced)
- 1/2 cup Dried apricot (sliced)
- 1/2 cup Raisins
- 1/2 tsp. Cinnamon
- 1 tsp. Cumin
- 1/2 cup Dry roasted almonds (chopped if desired)
- Method
- 1. Saute onion in non-stick skillet over medium heat for 2 minutes.
- 2. Add rice, water, and chicken bouillon and bring to boil, reduce heat, cover and simmer for 5 minutes.
- 3. Stir in dried fruit and spices. Re-cover and continue to simmer for 5 minutes. Set aside for 5 minutes.
