Moroccan Style Pilaf

  • 3-1/2 cups water
  • 1-1/2 cups Uncle Be’s Long Grain Perfection Rice (uncooked)
  • 1 tbsp. Chicken bouillon
  • 1 tsp. oil
  • 1/2 cup Onion (diced)
  • 1/2 cup Dried apricot (sliced)
  • 1/2 cup Raisins
  • 1/2 tsp. Cinnamon
  • 1 tsp. Cumin
  • 1/2 cup Dry roasted almonds (chopped if desired)
  1. Method
  2. 1. Saute onion in non-stick skillet over medium heat for 2 minutes.
  3. 2. Add rice, water, and chicken bouillon and bring to boil, reduce heat, cover and simmer for 5 minutes.
  4. 3. Stir in dried fruit and spices. Re-cover and continue to simmer for 5 minutes. Set aside for 5 minutes.
